The pan is great but for an item that you don't grease for Angle Food the manufacture uses a glue for labels that doesn't come off. I've spent 45 minutes using hot water/soap , peanut butter and goo gone it won't come off the inside of the pan or the bottom of the pan even with scrapping. Once you bake in it with the glue you have a nice nasty brown spot. I will never buy another pan from Wilton with a glued in label.
Perfect Angel Food pan August 3, 2008 L. Karpen (Oslo, Norway) I bought this pan recently and have already made several cakes in it. It's absolutely perfect for angel food cake, and the feet make cooling it properly so much easier. As one of the other reviewers mentioned its rare to find a cake pan that isn't nonstick coated, and that is just cast aluminum, which conducts heat well, and is easy to clean. Things do *not* stick to it.

I bought this pan after I got tired of buying angel food from the grocery store and being disappointed every time. There is nothing like a homemade angel food cake! This is the perfect pan. You will love it. Cleans up easy and the detachable bottom is great along with the tabs on the top so you can invert it in the pan instead of on top of a bottle like when I was a kid.

This pan works perfectly, better than any other pan I've tried (including non-stick) for angel food. The aluminum (not too thin, not too thick) has a subtely machined finish that the angel food climbs easily. The pan is nice and tall, and has "ears" to keep the pan off the counter during cooling (keeps the cake from collapsing, and keeps the cake-top crunchy).
If you've made angel food before, you know that it relies on sticking to the pan sides in order to rise. With non-stick pans (which this is not and you don't want) either the cake won't rise fully if the sides are too slick, or if the cake climbs correctly it has by definition stuck to the sides and you will ruin the pan's coating when you go to saw out the cake with your knife. With this bare aluminum pan, the cake climbs fully and there's nothing to damage - saw away. A brief soak and it comes clean easily. Perfect.
